Although the concept sounds cool, I like my polish pottery made the old fashioned way! Does anyone else have an opinion?

I agree with you. I think when pottery is done the old fashioned way, you have a more genuine product. Potters are artists, and you have to let the artist have the tools their most comfortable with, which is usually the most basic.
There will definitely be potters who are against this, but I suppose many of them won't see the point. Part of pottery is playing with the clay.
